Exotic earthy eastern flavours are seduced by spunky spinach- so sexy!
Curried Chickpeas with Spinach
2 tablespoons olive oil
1 small onion (diced)
3 cloves garlic (minced)
3 tablespoons curry
¼ teaspoon cinnamon
¼ teaspoon cayenne pepper
¼ teaspoon cumin
¼ teaspoon ginger
2 tins chickpeas/garbanzo beans (drained)
2 cups tomato sauce
4 cups spinach (chopped)
Cilantro to garnish
Heat oil in large skillet with onion. Sauté until soft and add garlic and spices. Bung in sauce and beans and heat through. Gently fold in spinach and garnish with fresh cilantro.
